Chopped liver with lots of brown onions is among the few dishes that came from Eastern European cuisine and found a foster home in kitchens of other ethnicities as well.
This is a fun delicacy to snack on at the bar alongside quality pickles and an alcoholic beverage or put over Shabbat challah, but among us it is most delicious with matzah.
Just before Pesach enters in all its glory and the white tablecloths are spread out on the tables, get three festive recipes.

Avi Bitton first tasted chopped liver at the Ashkenazi neighbor who lived on the floor below the family's apartment, in a building in Pardes Katz.
Although he grew up in a Turkish-Moroccan home, to this day he loves fried liver (preferably in goose fat), coarsely chopped with lots of brown onions and hard-boiled eggs, and has a recipe that anyone can make.
