Among the Ashkenazi Jews, matzah bray is eaten at Passover breakfasts, while among the Jews of Spain, do not give up on the Burmalicus or, if you like, the Spanish version of the matzah bray - matzah pancakes and fried and golden cheeses snatched straight from the pan.
Any cheese you have in the fridge, the Burmalicos will lovingly accept and along with the matzah crumbs, it is a delicious celebration.
