Ingredients for the dough:

  • 250 g flour

  • 2 teaspoons of baking soda

  • 50 g ground almonds

  • 140g softened butter

  • 140 grams of sugar

  • 1 tablespoon honey

  • 50 grams of cream

  • 150 g flaked almonds

  • 2 eggs

  • 300 grams of sour cream

Ingredients for the filling:

  • 400ml milk

  • 1 packet vanilla pudding powder

  • 60 grams of sugar

  • 250 grams of cream

  • 2 packs of cream stiffeners

Bee sting muffins: the preparation

  • Preparation

    : Preheat the oven to 180 degrees top and bottom heat.

    Prepare your muffin tin by placing appropriate paper liners and grease them.

    Put the butter out of the fridge for a while so that it softens.

  • Dough

    : Mix flour, baking powder and the ground almonds in a bowl and set the resulting powder aside for now.

    Then boil 40 grams of butter, 40 grams of sugar, honey and cream in a saucepan.

    When everything has been mixed well, remove the mixture from the heat and add the flaked almonds.

  • Chop the remaining butter and beat with the hand mixer until creamy.

    Gradually add the remaining sugar, eggs and sour cream.

    Then stir in the mixture of flour, baking powder and almonds.

    Divide this batter into the wells of the muffin tin and then add the mixture with the flaked almonds.

    Then let the muffins bake on the middle shelf of the oven for 25 minutes.

    You can use the chopstick sample to test whether the dough is ready.

    After baking, remove the muffins from the wells and let cool.

  • Filling

    : Mix three to four tablespoons of the milk with the custard powder and the sugar.

    Briefly boil the remaining milk in a saucepan.

    Add the pudding mixture to the saucepan and bring the liquid to a boil again.

    Pour the resulting mixture into a bowl and cover with cling film to prevent a skin from forming.

    Set the pudding aside for now to cool down a bit.

  • The cooled muffins are cut in half lengthways.

    Then mix the cream of the filling with the cream stiffener in another bowl.

    The pudding set aside is then folded in.

    Spread a large tablespoon of the pudding mixture on the base of the muffins and then press the top half with the slivered almonds onto the cream.

    The bee sting muffins are ready!
