– from just a few simple ingredients.
Make mustard yourself: Mustard seed imports are becoming more difficult
Mustard is made from vinegar, water, spices and mustard seeds.
That's all it takes to make the yellow seasoning sauce yourself.
Almost
80 percent of the mustard seeds imported into Germany
come from Russia and the Ukraine, which is making the situation difficult for mustard manufacturers, complains the general manager of the food association Kulinaria, Markus Weck, to the “Welt”.

You need these ingredients if you want to make mustard yourself
For three glasses of mustard:
200 g mustard seeds
275 ml white wine vinegar, so you can make it yourself
100ml of water
5 tablespoons sugar (about 80 g)
0.5 - 0.75 tsp turmeric, ground
3 tsp salt
If you want to make
mild mustard
, you have to use white and yellow mustard seeds.
Brown and black grains should be your choice if you like it
hotter
.
And maybe you've guessed it: for a
medium hot mustard
, all you have to do is mix the different mustard seeds.
Mustard cultivation in Germany
There are also mustard fields in Germany, but by no means sufficient for the domestic production of mustard.
The plants are mainly planted as cover crops and green manure.
Mustard flowers bright yellow from June and is often confused with rapeseed by laypeople.
From September or October, when the pods with the seeds are dry and light yellow, the mustard seeds are ready for harvest.
Make mustard yourself: this is how it works
You need some time to make

The preparation is done quickly, but the preparation takes two to three days.

In a non-plastic bowl, mix the mustard seeds thoroughly with the vinegar and water.
Then cover the bowl loosely, not airtight, and let the mustard seeds infuse in a cool place for
two to three days
.
Then place the mustard seed mixture in a tall container or blender, along with the sugar, turmeric, and salt, and
blend, pausing periodically
, until the mustard has a smooth consistency.
It is essential to keep the breaks so that the
mustard does not heat up during the pureeing
and then taste bitter.
Then pour the finished mustard into three clean, hot rinsed jars, close them tightly and leave the
mustard to steep for two or three days
before you taste it for the first time.
If you try it right away, the mustard will taste sharper than after the resting period.
Your homemade mustard will keep for up to three months in an
airtight container and stored in a cool, dark place
.
So you can store them wonderfully - even in your emergency supplies.
Make mustard yourself: quick method
If you
want to
make mustard yourself , but don't have the time or inclination to soak the mustard seeds, you can also
finely grind them
- with a mortar or a blender - and then process them further.
It's even faster if you use the
mustard flour

The finer it is, the finer the finished mustard will be.
To do this, boil the water with the white wine vinegar and let it cool down to a lukewarm temperature.
Then mix the mustard flour with the spices and then mix it with the water and vinegar mixture.
Blend the whole thing for about five minutes, longer if you like, until you have a smooth mustard, which you can then bottle and store as described above.
