We all know cheesecake and it is always a treat.

This simple yoghurt cake is just as delicious and even faster in the oven.

It's the salvation when you're expecting a surprise visitor for coffee and don't want to serve the guests a cake you've bought.

The yoghurt cake consists of just three ingredients and can be prettied up as you wish - which makes it the star of the coffee table.

You've probably never put a cake in the oven so quickly.

This yoghurt cake is baked in a flash.

5-minute yoghurt cake: You need these ingredients for baking

  • 400 g sweetened yoghurt - e.g. vanilla

  • 4 eggs

  • 40 g cornstarch

How to bake the lightning fast yoghurt cake

  • Preheat your oven to 170 degrees top/bottom heat.

  • Beat the eggs first, then stir in the yogurt.

  • Then sift in the cornstarch and stir again until you get a smooth mass with no lumps.

  • Pour the mixture into a springform pan lined with parchment paper.

    This is very easy with the water trick.

  • Now bake the yoghurt cake for 40 minutes.

    If it gets dark too quickly, cover with aluminum foil.

  • Leave the yogurt cake to cool in the oven.

    After about ten minutes, open the oven door a crack.

  • Then put it in the fridge for another hour or two.

Why you should let the yoghurt cake cool down in the oven

The warm yoghurt cake does not tolerate a sudden drop in temperature - just like its cousin the cheesecake.

If you let it cool down slowly in the oven, it won't collapse or form unsightly cracks on the surface.

This lightning-fast and simple yoghurt cake tastes particularly delicious with fresh fruit or a topping of fruit puree or jam.
