Stuffed peppers always feel like a pampering and invested meal, even if they don’t really require a lot of work and actual investment.
This time the classic stuffed pepper stuffed with rice and meat is being replaced by recipe and blogger Olga Tuchsher from the blog "The Secret Ingredient" with a simple, light and vegan Mediterranean filling of burgul with fried onions, garlic, carrots, tomatoes and parsley.
Perfect for a sumptuous lunch and also very suitable for entertaining.

Ingredients
6-7 peppers
To fill:
½1 cups of coarse burgul
2 tablespoons olive oil
1 chopped onion
3 cloves crushed garlic
2 medium carrots, grated on a coarse grater
1 large tomato, cut into small cubes
1 kopsarsk tomato (100 g)
1 teaspoon salt
½ A teaspoon of black pepper
1 teaspoon of cumin
1 teaspoon sweet paprika (heaped)
Chopped parsley
For the sauce:
3 boiling cups
1 kopsarsk tomato (100 g)
1 tablespoon sweet paprika
½ A teaspoon of salt
¼ A teaspoon of black pepper

Preparation
How to make peppers stuffed with burgul?
1 Transfer the burgul to a bowl, cover with water and soak for about an hour.
Filters.
2 Heat the oil in a large pan and fry the onion until golden.
Add the garlic and carrots, stir and continue to fry for another 2-3 minutes.
3 Add the tomato and fry while stirring for another 3 minutes.
Season, add the filtered burgul and tomato paste, mix and fry for another 5 minutes.
Add the parsley and stir again.
4 Cut the top of the peppers (do not discard), drain the seeds and clean the inner ribs.
5 Fill the peppers with the filling to the end, cover with the matching domes and place densely inside the pot.
6 Mix all the sauce ingredients in a bowl and pour over the peppers.
Cover the pot and bring to a boil.
7 Lower the flame and cook for about an hour and a half.
Occasionally open the pot and pour the sauce with a spoon over the peppers.
Turn off the heat and serve immediately.
