Some recipes taste like childhood.

It doesn't matter whether you reminisce with these delicious quark balls or rediscover them: imitate them!

Modern cuisine is always exciting, but classic recipes also have their charm.

It doesn't always have to be particularly complicated.

Quark balls,

for example, get by with little and still taste simply heavenly.

These little cakes are made from a

quark potato dough

and are versatile.

Eat them sweet with sugar and applesauce, or savory with ham and co. The specialty is mainly known in things, but it also tastes really good outside of the Free State.

You should definitely have eaten Quarkkeulchen at least once.

Recipe for Quarkkeulchen: You need these ingredients

  • 500g

    Potatoes, floury

  • 250 g

    lowfat quark

  • 50g

    Wheat flour (Type 405) plus a little for rolling

  • 25 grams of sugar

  • 1 egg yolk

  • 1 pinch of salt

  • 1 tsp lemon peel zest

  • clarified butter for frying (alternatively: cooking oil)

  • Powdered sugar and applesauce to enjoy

How to prepare the Quarkkeulchen recipe

  • Peel the potatoes (500 g), dice them and boil in salted water.

    After that, mash the potatoes and press through a potato ricer and let them cool.

    You can also cook the potatoes the day before.

  • Mix the potatoes with low-fat quark (250 g), egg yolk (1 piece), sugar (25 g), flour (50 g), salt (1 pinch) and lemon zest (about 1 teaspoon) and work everything into a dough.

  • Shape the quark dough into balls, flatten them into patties and coat them in flour.

  • Fry the quark balls in plenty of clarified butter or cooking oil until golden brown, turning them regularly.

     The recipe is quite impressive.

    When the

    quark balls

    are ready, sprinkle them with some icing sugar (this is an easy way to make your own) and serve with the applesauce.
