Vegetable antipasti requires a little preparation, but if prepared properly, it is a real pleasure.
The recommendation of chef Tamar Cohen-Tzedek, from the Hess 4 restaurant, is to prepare each vegetable separately, since each one requires a slightly different treatment.
To all add the holy trinity: salt, pepper and olive oil, but some will get a little sugar, like the sweet potatoes, some a splash of white wine, like the onions and some add a little balsamic vinegar, like the eggplant.
Tip:
Use disposable molds - each vegetable will be molded and seasoned and used accordingly.

The vegetables can be stored in sealed dishes in the refrigerator for up to 4 days and served at room temperature.
Apart from serving them as a colorful platter in the center of the table, you can definitely enrich them with green salads.

Sweet potato slices on the way to the oven
Ingredients
3-4 sweet potatoes
From salt

How to make sweet potato antipasti?
1 Rinse and scrub the sweet potatoes well and slice into 1 cm thick slices with the peel.
2 Place the sweet potato slices in a pan lined with baking paper, sprinkle evenly, salt, pepper and a little sugar.
Add olive oil and massage a little with your hands or brush with a brush for a uniform result.
Place the thyme branches and bake on top in an oven preheated to 180 degrees for about 20-15 minutes.
Zucchini antipasti

Zucchini slices with olive oil on the way to a short roast in the oven

3-4 zucchini or zucchini (preferably narrow and small)

How to make zucchini antipasti?
1 Rinse the zucchini well and slice with the peel into medium-thick slices.
2 Season the zucchini slices with salt, black pepper and olive oil and massage with your hands.
Arrange in one layer on a baking sheet lined with baking paper and place in a preheated oven at 180 degrees for 10 minutes.

1 cauliflower
Salt

How to make cauliflower antipasti?
1 Decompose the cauliflower into flowers, soak in cold water with salt for about 10 minutes and strain.
2 Mix the cauliflower flowers in a bowl with a little salt, pepper and olive oil.
Arrange the cauliflower flowers in a pan lined with baking paper in one layer and bake for about 20 minutes in an oven preheated to 180 degrees.
Before serving, squeeze a little lemon juice.
Beet antipasti

Ingredients
2-3 beets with the peel
3 cloves of garlic slices
2 tablespoons citrus vinegar (or other natural vinegar)

How to make beet antipasti?
1 Cook the beets with the peel in a pot with water until covered and a little salt.
When the beets soften, but not too soft, remove, cool and peel.
2 Slice the beets and place in a clean dish.
Season with salt, pepper, olive oil, vinegar and fresh garlic.

Ingredients
2-3 peppers (can be combined red with yellow or orange)
Olive oil
Salt
black pepper
Coarse salt
2 tablespoons citrus vinegar (or other natural vinegar)

How to make antipasti peppers?
1 Place the peppers whole in a pan lined with baking paper.
2 Grease the peppers, sprinkle with coarse salt and bake in a preheated oven at 180 degrees for about 20 minutes or until the peel is browned.
Transfer the peppers while hot to an airtight container or bag and close it.
When the peppers have cooled, peel the peels, cut into eighths and remove the seeds.
Transfer to a clean bowl and season with salt, pepper and vinegar.
