“I wasn't expecting it, but really not at all” Young baker, 34, Damien Dedun won the “best baguette in Paris” prize this Thursday, May 12.
He is the head baker in Frédéric Comyn's bakery in the 15th arrondissement.
“To be part of the 10 best baguettes, it's not much, it's in the small details.
And this year we managed to align everything”, proudly declares Frédéric Comyn, the owner of the bakery.
The young winner was selected from among 135 competitors from all over Paris.
The 14 members of the jury rated each baguette according to five very specific criteria: shaping, cooking, crispiness, smell, crumb honeycomb and taste.

“This price can lead to an increase of up to 30% in the turnover of the bakery”, recalls Guillaume Gomez, ex-chef at the Élysée Palace and member of the jury.
A fact confirmed by Damien Dedun since the day after his victory, customers flocked to his bakery to come and taste the best baguette in Paris.
"We had to double the quantity of bread produced," he announced. Damien Dedun therefore won a check for 4,000 euros and his bakery could become the official supplier of the Élysée for a year.
