The local berry season starts in June and strawberries, raspberries, blackberries, blueberries and currants finally sweeten our days again.

Thanks to a trick, sensitive berries don't go moldy so quickly.

Combine the sweet and sour fruits in this recipe with a fluffy sour cream to enjoy the cake.

comes with just a few ingredients and is easy to imitate, even for baking beginners.

Despite its simplicity, the cake looks and tastes great and will definitely impress your coffee guests.

Recipe for a simple red jelly cake: You need these ingredients

Portion:

1 cake

Preparation time:

40 mins

Baking time:

20 minutes + 120 minutes cooling

Difficulty level:

easy

For the ground:

  • 120 grams of wheat flour

  • 2 teaspoons of baking soda

  • 100 grams of sugar

  • 2 eggs, size M

  • 120 g butter, soft

For the cream:

  • 400 g sour cream

  • 100 grams of sugar

  • 400 grams of cream

  • 2 bags of instant gelatine

For the red fruit jelly:

  • 500 g berries, mixed (alternative: frozen goods)

  • 30 grams of sugar

  • 2 packets of cake glaze, clear

  • 50ml of water

How to bake the simple red jelly cake

  • Preheat your oven to 180 degrees top/bottom heat and grease a 26 cm springform pan with butter, margarine or baking agent.

  • Then mix the flour with the baking powder and the sugar in a bowl and gradually add the butter and the eggs.

    Beat everything with the whisk of the hand mixer to an airy dough.

  • Pour the batter into the springform pan, smooth out and bake for about 20 minutes.

    Then let it cool down for 10 minutes before removing the base from the springform pan and letting it cool down on a wire rack or the oven rack.

  • For the filling, first mix the sour cream thoroughly with the sugar.

    Then whip the cream until stiff and stir in the instant gelatine.

    Then carefully fold the cream into the sour cream and sugar mixture.

  • Then place the ring of the springform pan back on the cake base and spread the cream in it.

    Refrigerate for about 1 hour so the cream will set.

  • In the meantime you can prepare the red fruit jelly.

    To do this, boil the berry mixture in a saucepan with a little water.

    Then stir the cake glaze with a little water until smooth and boil the berry mixture with it.

    Let it simmer for a minute or two and then let it cool.

  • Then spread the cooled red fruit jelly over the cake and smooth everything out.

    Place the red fruit jelly cake in the fridge for another hour and loosen the springform ring just before serving.

  • The red fruit jelly cake is a fresh treat for the coffee table.

    You can also modify the recipe by thickening

    blueberries or cherries in their own juice

    instead of red fruit jelly and using it as a fruit glaze.

    If you don't want to cook the red fruit jelly yourself, you can also use a ready-made version and bind it with gelatine.
