Ingredients
For the focaccia dough:
1 kg of magic flour (flour containing yeast)
1 tablespoon sugar
650 ml
2 tablespoons olive oil
1 tablespoon salt (28 g)
For flouring:
Durum flour
For toppings:
2 cups cherry tomatoes, slices
½ Fresh, separated hyssop cups
50 g grated mozzarella

Preparation
How to make focaccia sticks?

Kneading:
In the mixer bowl with a kneading hook mix flour and sugar for about half a minute.
2 Pour the water gradually and mix for about 2 minutes until a uniform dough is formed.
3 Add olive oil, salt and stir for another 8 minutes.
The dough should be pliable and smooth to the touch.

Puffing:
Transfer the dough to a slightly floured bowl and puff for about an hour or more while the dough is covered with a towel, until the dough doubles in volume.
At the end of the swelling, preheat the oven to 250 degrees.

Weighing:
Weigh and divide the dough into 18 units, each piece weighing 85 grams.

Design:
Form from each piece of snake dough and flatten it lightly.
Place the sticks at intervals from each other on a baking sheet with a little durum flour sprinkled on them.
Gently spread the sticks with olive oil and sprinkle over grated mozzarella, hyssop leaves, cherry tomatoes and Atlantic sea salt.

Baking:
Bake for about 12 minutes until the dough is golden.
