Creamy rhubarb risotto with sparkling wine: It doesn't always have to be cake

More spring is not possible: cook this recipe for rhubarb risotto and enjoy this unusual but delicious combination.
Rhubarb is in season now and can be used in tons of delicious rhubarb recipes.
But if you can no longer see cake, compote and spritzer, you should remember that the green-red sticks are actually vegetables.

It is very easy to cook and if you stir diligently, you will be rewarded with creamy delicacies.
Recipe for rhubarb risotto with sparkling wine: You need these ingredients
1 onion
25 grams of butter
2 tbsp olive oil
120 ml rosé sparkling wine (alternatively: rosé wine)
250 g risotto rice
800 ml vegetable broth
50g parmesan, grated
500 grams of rhubarb
1 tsp sugar
100ml of water

Hearty rhubarb recipe: How to cook the wonderfully creamy rhubarb risotto with sparkling wine
Wash and trim the rhubarb according to these instructions.
Then remove the ends and the leaves and cut a stalk of
rhubarb into very small cubes
and the rest of the rhubarb into pieces about 1 cm thick.
Boil 100 ml water with 1 teaspoon sugar and pour it over the small diced rhubarb.
Peel and dice the onion and sauté in 1 tablespoon olive oil until translucent.
Then add the risotto rice and the remaining pieces of rhubarb and sweat for a few minutes.
Then deglaze the whole thing with the rosé sparkling wine, let it simmer a little and then gradually pour in the vegetable broth and let it boil down while you stir constantly.
Stir and pour in new broth until the broth is used up or the risotto is cooked.
Finally, stir in the
parmesan and butter
and season the rhubarb risotto with salt and pepper.
Before you serve the rhubarb risotto, drain the scalded diced rhubarb and spread over the risotto.
It is best to serve the rosé sparkling wine that you also used for cooking with
the
rhubarb risotto .
If children are eating, do without the sparkling wine and instead use white grape juice, apple juice or simply more broth, as the alcohol will not boil off sufficiently.
