This strawberry cake with almonds and cream cheese is also a low-carb treat.

Strawberry cake is a classic that makes our mouths water every year.

A biscuit base, a layer of pudding and lots of strawberries on top - a real treat.

Fruit cake is figure-friendly than a cream cake, but calories and especially carbohydrates are also hidden here.

But you can easily modify a strawberry cake so that it is lighter and still remains really tasty.

Recipe for low carb strawberry cake: You need these ingredients

Ingredients for the base:

  • 50 g butter, room temperature

  • 3 eggs, size

    M

  • 170 g ground almonds

  • 30 g de-oiled almond flour

  • 1 tsp locust bean gum

  • 80 g xylitol

Ingredients for the topping:

  • 150 g cream cheese (alternatively: Greek yoghurt)

  • 30 g xylitol

  • 500g fresh strawberries

Low carb strawberry cake: How to bake the simple recipe

  • Preheat your oven to 180 degrees top/bottom heat.

  • Beat the eggs with the butter until fluffy.

    This works best on the highest level of the hand mixer with the whisk attachments.

  • Mix the ground almonds, ground almonds, locust bean gum, baking powder and xylitol together well and stir thoroughly into the egg and butter mixture.

  • Thoroughly grease a 26cm tart case and sprinkle with ground almonds.

    To do this, place them as evenly as possible next to each other with the tip pointing upwards so that a coherent picture results.
