Ingredients
For dough:
500 g spelled yeast flour
3 tablespoons sugar
1 tablespoon salt
3 eggs
1 Corsovion
For the spinach and cheese filling:
¼ Olive oil
3 halved and sliced onions
4 cups washed fresh spinach leaves
4 cloves of crushed garlic
Salt
Ground black pepper
Muscat Metaguz
200 grams of feta cheese
2 tablespoons pine nuts

Preparation
How do you make spinach and cheese from spelled flour?

Prepare dough:
Put all the dough ingredients in a bowl and put well with a mixer with a kneading hook or with your hands until a smooth dough is obtained.
Place the dough in a slightly greased bowl, cover with a bag and puff until it doubles in volume (between one and two hours, depending on the weather).

Prepare the stuffing:
Heat a pan over low heat with the olive oil and brown the onion gently.
Add garlic, and the spinach leaves and cook until the leaves soften.
Season.
Cool and add crumbled cheese and pine nuts.

Fillers and Shapers:
Return to puffed dough.
Remove air from it and roll into a large rectangle half a centimeter thick. Spread the filling in an even layer and roll into a roll.
4 Cut the roll of roses about 4 cm wide and arrange in a round pan 26 cm in diameter or in two English cake pans.
Brush with beaten egg and swell for about 30 minutes.

Bake:
Preheat oven to 180 degrees and at the end of the second puffing put the yeast pastry in the center of the oven for 45 minutes until it is browned and nice.
