We have a few tips to make this rhubarb cake particularly juicy.

Rhubarb cake with quark cream: the ingredients

Servings:

For the batter:

  • 200 grams of butter

  • 160 grams of sugar

  • 1 pinch of salt

  • 4 eggs

  • 250 g flour

  • 1 pack of baking powder

For the curd cream:

  • 500 g low-fat quark

  • 300 grams of cream

  • 1.5 packs of custard powder cream

  • 75 grams of sugar

  • 1 tsp vanilla sugar

  • 1.25 kg of rhubarb

For the sprinkles:

  • 250 g flour

  • 125 grams of sugar

  • 150 grams of butter

How to bake the rhubarb cake with quark cream and crumbles

  • Preheat the oven to 200 top/bottom heat.

  • Line the drip tray (or high-sided baking sheet) with baking paper (or one of these alternatives).

  • Wash and trim the rhubarb according to these instructions and cut into pieces approx. 1 to 2 cm long.

  • For the batter, butter, sugar and salt

    with the hand mixer (promotional link)

    stir until frothy.

    Gradually add the eggs and mix in carefully.

    Take a minute for each egg.

  • Mix the flour and baking powder, add to the wet ingredients.

  • Put all the ingredients for the quark cream in a bowl and mix with the hand mixer.

    Then spread it on the batter and smooth it out.

  • Mix all the ingredients for the crumbles with the hand mixer and then use your fingers to crumble over the cake.

    Tip:

    Mix in crunchy oatmeal if you love crunchy crumbles.

  • Bake the cake for about 45 minutes, depending on the oven setting, until the crumbles are golden brown.
