Do you think a creamy hollandaise sauce goes with the asparagus?
We tell you how to cook a light variant that is just as delicious - at least.
Sauce Hollandaise is a light, whipped butter sauce that is eaten with asparagus (so you get the best bang for your buck), but also with other vegetables, Egg Benedict or fish.
A creamy, delicious sin that brings with it a lot of pleasure, but also a lot of calories, because the conventional recipe for Hollandaise sauce uses no less than 250 grams of good butter.
Every now and then you treat yourself to a calorie bomb, but in the asparagus season it quickly becomes a few spoonfuls too many, and that so shortly before the beach season ...
So this light variant is just right:

This recipe only uses 50g of butter, which is just a fifth.
But less butter doesn't mean less taste here.

Light yoghurt hollandaise: You need these ingredients

1 egg, size M
3 egg yolks, size M
2 tsp lemon juice
optional: 100 ml white wine (alternative: water)
1 pinch of sugar
50 g butter, liquid
2 tbsp creamy yoghurt
salt and pepper
Recipe: How to properly prepare the light yoghurt hollandaise
For three eggs, separate the yolks from the whites.
The bottle trick makes it quick and easy, but the garlic tip also works.
In a saucepan, mix the egg, the three egg yolks and the lemon juice with the white wine and season with salt, pepper and a pinch of sugar.
Now melt the butter on the stove or in the microwave.
You must not tan under any circumstances!
Then place the saucepan on the stove over medium-high heat and use the hand mixer and whisk attachment to beat the mixture until thick and creamy.
Now, with the hand mixer running, beat in the melted butter and the creamy yoghurt and season your yoghurt hollandaise again with salt and pepper.

and is so quick and easy to make that you won't have to buy Hollandaise Sauce again.
