Ingredients
For 12 muffin units:
3 eggs at room temperature
100 grams of soft butter, at room temperature
½ White sugar (100 g)
½ Demerara cup sugar (100 g)
200 grams of sour cream
1 teaspoon vanilla extract
100 grams of ground pecans
1 cup puffed flour
Above the muffins:
50 grams of pecans (12 whole halves and the rest grated)

Preparation
How to make pecan muffins?
1 Preheat oven to 180 degrees and grease the muffin tin sockets.
2 In a mixer with the whipping balloon, beat together butter and two types of sugar for about 5 minutes.
3 Add the eggs while whisking - one egg at a time, wait for it to assimilate into the mixture and only then add the other.
4 Add the sour cream and vanilla and whisk.
5 Add the ground pecans and the puffed flour and mix just until the mass is combined and no more, so as not to develop gluten and form compressed muffins.
6 Pour the batter into the socket mold, about 3/4 of the height of each socket.
Place half a pecan on top of each and some more shredded pecans.
7 Bake for about 25-30 minutes until the muffins are firm.
As soon as they are ready brush with maple syrup.
