Creamy desserts are a perennial favourite, but eventually you'll go through all the usual suspects: tiramisu, cream cakes or even semolina porridge.
It's time for something completely new and this is where
Rhubarb Fool
comes in at the right place.
The English dessert cream is wonderfully fluffy, fruity and also very easy to prepare.
Rhubarb Fool: You need these ingredients for the creamy dessert
For the rhubarb compote:
250 g rhubarb, cleaned
40 grams of sugar
juice of 1/2 lemon
some vanilla extract
some water
Besides that:
500 ml whipped cream from the fridge
3 tbsp powdered sugar
2 packets of whipped cream

Easy Dessert Recipe: How to make Rhubarb Fool
Prepare the rhubarb
compote a little in advance
, as it has to cool down completely before you can process it further.
To do this, cut the rhubarb into pieces (if you want a red compote, do not peel it first) and then simmer it together with the sugar, lemon juice and vanilla extract over a low heat.
If there is not enough liquid and the rhubarb starts to set, add a little water.
Feel free to prepare some more compote, then save this step for the next
Rhubarb Fool
.
Then whip the cream with the hand mixer until stiff and stir in the powdered sugar and the whipped cream.
Now take some
rhubarb compote
and gently fold it into the cream.
Then layer the compote and cream alternately in a dessert glass.
Place the Rhubarb Fool, covered, in the refrigerator until ready to serve.
If you don't want to do the work of layering, you can also fold the rhubarb compote completely under the cream - but very carefully so that the dessert still remains nice and airy.
When the
rhubarb season
is over (it lasts until June 24th), the fool's recipe can also be modified and prepared with berries, plums or apple sauce.
