Fairytale recipe: Do you already know the Frau Holle cake?

Everyone knows Frau Holle from the fairy tale - like here in the film with Marianne Sägebrecht from 2008. But do you also know the cake of the same name?

Frau Holle not only shakes out the beds, this delicious sheet cake is also named after her.

When Mother Hulda shakes out her beds, the down falls to earth as snowflakes.
Every child knows that.
But she didn't bake a cake in the Brothers Grimm fairy tale, did she?
No, the cake recipe for Frau Holle cake
simply owes its name to
its heavenly appearance, especially the top layer of cream and white chocolate shavings, reminiscent of snow.
What this cake also has to offer: a fluffy sponge cake base and a fruity layer of strawberry puree.

Frau Holle cake: You need these ingredients for the sheet cake

For the biscuit base:
4 eggs
150 grams of sugar
100 grams of vegetable oil
200 grams of mineral water
300 grams of flour
3 tsp baking powder
1 pinch of salt
For covering:
750 grams of strawberries
2 packets of vanilla sugar
8 sheets of gelatine or 1 heaped teaspoon of agar-agar
500 grams of whipped cream
2 packets of whipped cream
150 g white chocolate or grated chocolate
strawberry season
In summer you can prepare the delicious cake with fresh strawberries, then it tastes even better.
Outside of the strawberry season (which runs from May to September), it is better to use frozen berries or other seasonal fruit such as cherries, apples or plums.

How to bake Frau Holle cake: simple sheet cake recipe
Preheat the oven to 180°C top/bottom heat or 160°C fan oven.
Cover a baking sheet with parchment paper or an alternative.
For the sponge cake
, put the eggs and the sugar in a bowl and beat both with the hand mixer until fluffy.
Stir in the oil and mineral water.
Separately, mix the flour with the baking powder and pinch of salt and fold the dry ingredients into the others.
Then spread the batter on the prepared baking sheet and bake in the oven for about 20 minutes.
Then let it cool down.
For the topping
, first wash the strawberries, cut them into small pieces and puree them with 1 sachet of vanilla sugar.
If using
gelatin
, soak it in cold water first, then squeeze and dissolve in a saucepan over low heat while stirring.
Add 4 tablespoons of the strawberry puree to the gelatine, stir until smooth and add this gelatine mixture to the remaining strawberry puree.
If you prefer to use
agar-agar
(advertising link) as a vegan alternative, simply stir it into the strawberry puree.
Spread the strawberry puree on the cooled biscuit base and let it cool down as well.
Whip the cream with the whipped cream stiffener and drizzle in the remaining vanilla sugar.
Spread the cream on the strawberry puree.
Grate the white chocolate with a potato peeler and spread it over the cream layer.
