We have known the culinary abilities of the ketogenic chef Oded Talmore for a long time and in the past we have published quite a few excellent recipes that we like to return to again and again, such as a recipe for divine ketogenic pizza from mozzarella dough, beef stew in cauliflower and cauliflower stuffed with minced meat. .

The book "Fat is a Friend" is divided into two parts: in the first part, Talmore's life story is combined with theoretical and practical knowledge regarding ketogenic nutrition and in the second part you will find a rich variety of practical tools and delicious and easy-to-prepare recipes.

The schnitzels are wrapped in pastry crumbs based on almond flour.
It can be easily prepared on your own at home (exact explanation in the recipe) and you can buy pastry crumbs based on KETO CHEF almond flour.
The secret:
As soon as the schnitzels come out of the oil, season with lots of salt.
This gives a crispy and just plain crazy texture.

Ingredients
500g sirloin / beef breast / thinly sliced sheitel
4 eggs
1 tablespoon Dijon mustard (without sugar)
Salt
Ground black pepper
½ Coconut oil for frying
For "bread crumbs" based on almond flour:
200 grams of almond flour
2 tablespoons sesame seeds
1 tablespoon chia seeds
1 teaspoon coarse salt
To serve:
Lemon cut into slices
Chopped green onion

Preparation
How to make a ketogenic beef schnitzel?

Prepare the pastry crumbs based on almond flour:
In a non-stick pan over low heat, toast the ingredients of the mixture - almond flour, sesame seeds, chia seeds and salt, stirring constantly until golden.
About 5 minutes.
Set aside to cool.
* Double quantity can be prepared and stored in an airtight container for the next time as well.

Prepare the schnitzel:
If your pace is really nice, then the meat is already finely pounded like meat for a schnitzel.
If not, place each slice between two baking sheets and beat with a hammer used several times to obtain a thin slice.

3 egg carnivores with mustard, salt and black pepper in a bowl.
Wrap each slice well in the egg batter and transfer to the pastry crumbs until each piece is well coated.

4 Heat coconut oil in a large pan and fry the schnitzels on both sides until completely browned (note that the resulting color is darker than regular schnitzel).
Transfer to absorbent paper.
