Etna wine from the volcano to the depths of the sea

) - PALERMO - For the first time in the history of Etna enology, the wines of Etna descend to a depth of about 50 meters below sea level, in the protected marine area, Isola dei Ciclopi, to experience underwater refinement , together with a gin, the first of Etna.



The experimentation will examine the evolution of wines in aging during, and not after, their permanence under water, through the analysis of samples taken by specialized divers who will descend into the depths of the sea, month after month.

The experimental research kicks off from the innovative start-up Orygini, founded by three young friends, Giuseppe Leone, Riccardo Peligra and Luca Catania, who financed the project, gaining the trust and support of two of the most representative Etnean wineries: the Benanti winery founded by the knight Giuseppe Benanti and today managed by his sons Antonio and Salvino, and the Passopisciaro winery, founded by the recently deceased Tuscan producer, Andrea Franchetti, and today led by his son Benjamin.

The presentation of the project will be held during a press conference on Thursday 14 July at 6.30 pm at Palazzo Biscari in Catania.

The founders of Orygini, the owner representatives of the wineries who have bet on the submarine refining method, Professor Elena Arena of the Agriculture, Food and Environment Department of the University of Catania, and Riccardo Strada, director of the Cyclops Islands Marine Protected Area will speak.



The bottles will in fact be immersed in zone B of the Isola dei Ciclopi protected marine area at a depth of about 50 meters inside specially created metal cages.

The wines will refine for about six months and the analysis of the 'marine samples' will be carried out in parallel, on the same parameters, with respect to the analysis of the samples subjected to the traditional cellaring process, on land.

This is the first study in the world on how wines under water evolve over time.

The complete mapping will allow to understand how the pressure, the total darkness, the absence of sounds, the constant temperature, the absence of noise change the wine.

Month after month, the wine samples taken from the seabed will be transported under controlled temperature conditions to the laboratories of the



14 different parameters between red and white wines will be monitored.



Today, wines are aged under water in France, Italy, Greece, Spain, the United States, Chile, South Africa, Australia and several other countries.

The total number of wineries he refines with underwater wines is extremely small.

Current studies are mostly based on pre and post dive chemical analysis.

To date, there are no scientific publications disclosed on the effects of subsea refinement in its evolution.

The wine cellar in the sea favors energy saving because it creates a naturally refrigerated environment for the bottles.

It is therefore not necessary to regulate the temperature and humidity with air conditioners, nor to create thermally insulated cellars, with significant energy and logistical savings.The life of each bottle will be monitored and digitally recorded with blockchain technology.

The serial number will tell you everything, from the date of harvest and harvest of the grapes onwards.

These bottles will naturally have the peculiarity of being non-reproducible, sculpted from shells and marine crustaceans, collectible bottles.
