Full of flavor and it makes a lot of impression (Photo: Supplier 500, Afik Gabay)
Cacio e Pepe (or cheese and pepper in direct translation) is perhaps the most ingenious pasta dish created by the Italians (or rather, the Romans).
She is ingenious because she only needs three ingredients, she is full of flavor and she makes a lot of impression with nothing of effort.
The secret ingredient here is the cooking water of the pasta, which helps to melt the cheese and unify the sauce.

Preparation
How to make cacho a papa?
1 Cook the pasta in a pot with salted boiling water, one minute less than what is written in the manufacturer's instructions.
Strain, do not rinse, and keep a glass of the cooking water.
2 Melt the butter in a wide, flat pan.
Add half a cup of the cooking water you saved, the grated cheese and the black pepper.
Mix well until a kind of almost smooth sauce is formed.
4 Add the filtered pasta, season with salt and add some more of the cooking water.
Cook, stirring, for 20-30 seconds, until the pasta absorbs most of the liquid.
Transfer to serving plates and serve immediately.
Tip
6 :
To serve pasta as in the picture, take a large BBQ fork, load it with pasta and in a ladle of soup, turn it until all the pasta is on top.
Carefully place the fork with the pasta on a flat plate and pull it out so that the cool shape remains.
