But what to do if you are
vegan
and do not eat any animal products?
Then at least one typical ingredient is left out: the eggs.
First of all: You don't have to do without homemade pasta.
Instead, you can only modify the basic recipe slightly or it depends on the right technique.
The dough for tagliatelle can also be thickened with durum wheat semolina instead of eggs.

But first you have to understand why the egg in the pasta dough is necessary at all.
Basically, it serves as a binding agent and can be replaced by
alternatives such as durum wheat semolina
.
This is tasteless and can be easily mixed with other ingredients such as flour.

you need:
150 g durum wheat semolina
150 grams of flour
1 tsp salt
1 tsp pepper
1 tbsp olive oil
150ml of water
flour for the work surface
1.5 liters of salt water

How to
prepare step by step
:
Mix together the durum wheat semolina, flour, salt and pepper.
Then form a well in the center of the dry mix.
Now put the olive oil and the water in the well.
Knead the dough well to mix all the ingredients together.
Let the pasta dough rest for half an hour.
This makes its consistency firmer and later easier to work with.
Dust the work surface with flour.
Roll out the dough thinly with a rolling pin.
Shape the noodles as you like.
Heat the salted water in the saucepan and cook the noodles in it for about eight minutes.
When cooking, you should note that the noodles have a different cooking time depending on their size and shape.
The noodles are ready when they float to the surface.
Otherwise, you can also use a fork to test whether the
noodles are soft but firm to the bite
.
These can then be used to make a wonderful pasta salad for the next barbecue.
