Because banana bread urgently needs an update 🍌
Who doesn't know it?
No sooner have you bought bananas than they are already overripe.
What to do with the brown, crooked things?
The answer, of course, is: banana bread!
But since we all have more than enough of the boring 0815 banana bread, here is a new interpretation.
And not only the shape is different, but also the inside.
I'll just say: cocoa biscuits with vanilla cream.
That's how it's done:
You need these ingredients for this mega juicy banana cake:
Banana bread:
400 g ripe bananas, finely mashed
120g brown sugar
2 eggs
1 pinch of salt
1 tsp cinnamon
150 ml sunflower oil
100 ml almond milk (or another milk alternative)
300 grams of flour
2 teaspoons of baking soda
100 g cocoa biscuits with vanilla cream filling
75 g walnuts, chopped
cream cheese cream:
300 grams of cream cheese
lemon juice (optional)
powdered sugar (optional)
cinnamon (optional)
Topping:
caramel sauce
Cocoa biscuits with vanilla cream filling
banana slices
walnuts
The preparation is very easy:
Preheat the oven to 160°C.
Line a round springform pan with baking paper.
For the banana bread:
Mix the mashed bananas well with the sugar, eggs, salt, cinnamon, sunflower oil and almond milk.
Add the flour and baking powder and stir to form a smooth batter.
Coarsely crumble the cocoa biscuits and fold into the batter with the walnuts.
Pour the batter into the prepared pan and bake until the top is golden brown and set, about 30 minutes.
Let cool down.
For the cream cheese cream:
Season the cream cheese to taste with powdered sugar, lemon juice and cinnamon and stir until creamy.
Spread cream cheese on banana bread and decorate with caramel sauce, banana slices, cocoa biscuits and walnuts as you like.
Relish!
