Ingredients
For the bun dough:
600 g spelled flour with yeast
1 tablespoon sugar (10 g)
2 tablespoons olive oil (20 ml)
1 cup sour cream (200 g)
1 egg
Lukewarm buckwheat (180 ml)
2 teaspoons salt
To brush the rolls before baking:
1 egg
Pinch of salt
To brush the rolls after baking:
½ Olive oil
3 tablespoons chopped herbs that you like (porcelain / dill / basil / oregano)
2 cloves crushed garlic
1 teaspoon coarse salt

Preparation
How to make spelled rolls with garlic and herbs?
1 In the mixer bowl put the flour, sugar, olive oil, sour cream and egg.
Attach the kneading hook and operate the mixer on low speed.
2 Gradually add while kneading the water until a ball of dough is formed.
3 Add the salt and put for 10 minutes until a very soft and elastic dough (but not sticky) is formed.
4 Cover the mixer bowl with the dough ball in cling film or transfer it to a bowl and cover with cling film.
Swell for about an hour, until the dough doubles in volume.
5 Transfer the dough to a floured work surface and remove the air from it.
Roll the dough into a large circle.
Divide the dough into 20 equal parts and roll into round, taut rolls.
6 Place the rolls in a pan lined with baking paper with relatively small intervals so that they have room for an apple, but they will stick to each other in baking (you can also put in large intervals, but it is fun that they stick together and then "pull" each bun).
7 Cover the pan with a clean kitchen towel or cling film and swell for about 30 minutes, until the rolls almost double in volume.
8 Preheat oven to 180 degrees.
9 Brush the puffed rolls with beaten egg and place in the oven for baking for 25-30 minutes, until golden.
10 While the rolls are in the oven, mix the olive oil, herbs, garlic and salt in a bowl.
11 Once the rolls are hot out of the oven, brush them with the olive oil mixture with the herbs.
