Ingredients

  • For dough:

    • 2 cups white flour (280 g)

    • 1 whole wheat flour or whole spelled flour (140 g)

    • 1 teaspoon dry yeast or 3 teaspoons fresh yeast

    • 1 buckwheat (240 ml)

    • 1 teaspoon salt

    • 1 teaspoon sugar (permission)

    • 2-3 tablespoons olive oil

    • 120 grams grated yellow cheese

    • 1 teaspoon dry oregano

  • To fill:

    • 25 pitted green olives

    • 3 tablespoons sesame seeds

Preparation

How to make homemade olive rolls?

  • 1 In a bowl, mix the water, flours, yeast, salt and sugar.

    When the mixture is combined and a dough is obtained, add the olive oil, yellow cheese and dried oregano.

    Put the dough with your hands for 3 minutes, until it feels smooth and pleasant to the touch.

  • 2 Cover the bowl with a plastic bag or kitchen towel and let the dough rise for an hour and a half in a warm place (or two hours in a cold room).

  • 3 Preheat oven to 190 degrees.

  • 4 Divide the dough into 25 balls.

    Flatten each ball into a kind of pita, inside the pita bury an olive and close the dough around it.

    Dip one side of the dough in the sesame seeds and place in a pan with baking paper, with the side with the sesame seeds facing up.

  • Bake in the hot oven for 15-20 minutes or until the rolls are golden and the dough is completely baked.

  • 6 Take out and let the rolls cool slightly before eating.

  • Stored refrigerated for 4-5 days, can also be frozen.
