At Orly Plai Bronstein's, everyone really likes the Hagadashi tofu dish from Japanese cuisine, those crispy tofu cubes that come in a soup or a mild sauce full of umami flavors.
This time she replaces the tofu cubes with fried salmon cubes that get a golden and crispy coating on the outside, adds noodles, wraps everything in the wonderful Japanese sauce and creates a dish that is a light and not heavy meal.
The unique taste of Hagadashi is created by briefly cooking shiitake mushrooms, kombu seaweed, soy and mirin.
You can also season with a little dashi powder, but it is not mandatory.

Ingredients
For salmon:
500 grams of salmon cut into cubes
½ cup cornflour (or tapioca flour)
Oil for deep frying
For Agadashi sauce:
4 dried shiitake mushrooms
2 hot cups
1 combo accelerator (optional)
¼ cup soy sauce
½ rosemary (sweetened Japanese rice wine)
½ semi-dry white custard
1 teaspoon fresh lemon juice
Matadashi (optional)
To submit:
300 gram noodles
Chopped green onion

Preparation
How do you make salmon agadashi with noodles?
1 Put the sauce ingredients in a small pot and cook for about 10 minutes on low heat until the flavors are extracted.
2 At the same time, cook the noodles in a pot with water.

3 Coat the salmon cubes in cornflour and shake off excess.
4 Heat oil for frying in a small pot and fry the salmon cubes until golden and crispy.
5 Divide the noodles between the bowls, add sauce and salmon cubes and mix.
Add green onions and serve.
