Bukhari stirred

The Bukhari rice dish seasoned with green herbs and meat was the favorite lunch of cook Mittal Panhasov Hadar as a child.

"Then I would eat it with ketchup," she laughs.



The hash is one of the richer and easier to prepare dishes that children really like and does not require a lot of preparation time.

Today, as a mother herself, Panchasov prepares the dish for her children and prefers to forego the addition of dill, which is less popular with the little ones. She also sometimes converts the beef and combines it with ground chicken meat or turkey.

Bakhsh Bukhari

Ingredients

    • 1 large onion, chopped

    • canola oil

    • 500 grams of ground beef (half of the meat can be replaced with chicken or turkey meat)

    • Round (or Persian) kg

    • 5 packages chopped cilantro with the stems (or cilantro with parsley)

    • 6 cups of boiling water (for every cup of rice, a cup and a half of water)

    • A tablespoon of coarse salt

    • Generously ground black pepper

Preparation

How to prepare Bukhari rice?

  • 1 In a wide pot with oil, fry the chopped onion until translucent.

  • 2 Add the minced meat and crumble while frying until it changes color.

  • 3 Wash the rice, drain and add to the pot along with the chopped coriander.

    Mix well for about a minute or two.

  • 4 Pour the water, mix and bring to a boil.

  • 5 Season with salt and pepper, transfer to a low heat and cook covered for 30 minutes.
