This sweet semolina casserole with cherries brings back childhood memories

Our delicious casserole with cherries is prepared in just a few simple steps and tastes good for the whole family.
That's how it's done:
You need these ingredients:
5 eggs, separated
125g brown sugar
1 packet of vanilla sugar
500 g edible quark
70 g wheat semolina
1 tsp lemon zest
1 pinch of salt
370 g sour cherries (jar)
Besides that:
butter for the mold
powdered sugar
The preparation is easy:
Preheat the oven to 175°C.
In a bowl, beat 5 egg yolks with the sugar and vanilla sugar using a hand mixer until thick and whitish.
Stir in the quark, wheat semolina and lemon zest.
In a clean bowl, beat 5 egg whites with salt until stiff and carefully fold the egg whites into the mixture.
Fold in the drained sour cherries as well.
Pour the semolina mass into a mold greased with butter and smooth out.
Bake for 40 minutes until the casserole is lightly browned.
Dust with powdered sugar and enjoy.

Basically: semolina are small pieces of grain.
durum wheat semolina:
Derived from the ancient grain durum wheat, also known as durum wheat.
Main ingredient of pasta, couscous, bulgur or pizza dough.
Contains a lot of gluten, which makes the dough more elastic and firm.
Stays al dente while cooking.
soft wheat semolina:
Comes from wheat and is therefore the raw material for typical wheat flour (the main ingredient in rolls, bread and sweet baked goods).
Use in semolina porridge, baby food or soups.
Softens during cooking and provides a creaminess.
By the way:
Semolina can also be ground from corn, rye, barley, millet, buckwheat or spelt.
For example, polenta is made from cornmeal
If you want to enjoy a semolina casserole with bite and flavor, use durum wheat semolina.
Soft wheat semolina is better for a softer casserole that you can spoon away.
