Ingredients
For fish:
4 A prayer for a fresh shine
40 grams of butter
2 tablespoons olive oil
2 sliced garlic cloves
Sage
salt to taste
Pepper to taste
For quinoa:
2 cups quinoa mix "Suget"
Finely chopped celery stalks
½ bunch of finely chopped cilantro
For seasoning:
A whole lemon, just the juice
2 tablespoons olive oil
salt to taste
Pepper to taste
To submit:
Roasted almonds or pistachios

Preparation
How do you prepare seared lebarak in a pan on a bed of quinoa?

Prepare the quinoa:
cook the quinoa like pasta - bring a small pot of water and a little salt to a boil, when the water boils add the quinoa and stir every few minutes with a fork until the quinoa is soft (about 20 minutes).
2 Filter and transfer to the refrigerator for an hour, add the celery and coriander.
3 Season with lemon, olive oil, salt and pepper and mix.

Prepare the fish:
heat a pan over medium heat and put 20 grams of butter, a tablespoon of olive oil, garlic and sage leaves in it.
5 Place two fish fillets in the pan, skin side down, season with salt and pepper and press the fish with a wooden spoon.
When around the fish changes its color and after about 3-4 minutes you can get a small burn on the top of the fish.
6 Repeat the same operation with the other two fish.

Serve:
on a flat plate place the quinoa as a base for the fish and place the hot halibut on top.
Garnish with pistachios or almonds and serve.
