As a full-time plus-plus mom, I have several quick pots in my closet - quick meals that are cooked in one pot.
I really like to make this pot in a slightly different version every time: sometimes with rice, sometimes it's bulgul, with or without lentils, so that each time you get a slightly different flavored dish.
This time I made us a pot with rice, chicken breast cubes wrapped in spices, grated carrots that add sweetness and color and roasted pine nuts.
And if left?
The most fun to pack in a box the next day for lunch at work.

Ingredients
500 grams chicken breast or chicken fillet
⅓ cup of oil
1 large chopped onion
1 coarsely grated carrot or cut into juliennes
3 cups basmati or jasmine rice
½ 4 cups
salt to taste
Chopped cilantro or parsley, to taste
½ cup pine nuts or slivered almonds
For the spice mix:
2 tablespoons of tahvij for the soup
1 teaspoon ground allspice
½ teaspoon black pepper

Preparation
How do you make rice with chicken breast in one pot?
1 Mix all the spices in a bowl (except the salt).
2 Cut the chicken into 2*2 cm cubes and mix it in a bowl with half the amount of spices.
3 Heat a third of a cup of oil in a wide pot (with a lid) and fry the chicken wrapped in spices, until it is seared on all sides.
Remove to a plate.
4 Put the onion in the pot, fry until lightly golden and add the carrot for a light fry of 2 minutes.
5 Return the chicken to the pot and stir.
6 Add the rice, the spices (save half a teaspoon of the spices for the pine nuts), the salt and the chopped cilantro.

7 Pour the water and bring to a boil.
Transfer to the lowest heat, cover the surface of the pot with a clean kitchen towel and put the lid on top of it.
Cook for about 40 minutes.
8 In the meantime, mix the pine nuts with what is left of the spice mixture, a teaspoon of oil and a little more salt.
Sounds on a pan while constantly stirring and watching (it only takes a few minutes).
9 After 40 minutes, turn off the heat, open the pot, mix the contents a little and set aside for 10 minutes to
rest before serving.
10 Serve with the pine nuts on top.
Tip:
don't give up the spiced roasted pine nuts, it adds an excellent twist to the bite of the dish.
You can also add pre-cooked lentils to the pot or omit the meat and serve as a side dish or as a vegetarian dish.
