  • 4 eggs

  • 200 g courgettes (grated, drained)

Erythritol and xylitol are sugar substitutes that vary in sweetness.

Recipe: zucchini chocolate cake without flour and sugar

  • Preheat the oven to 180°C top/bottom heat or 160°C fan.

  • In a bowl, combine erythritol (or xylitol), ground almonds, ground flaxseed, cocoa, ground psyllium husk, and baking powder and mix together.

  • Then add milk, softened butter and eggs and stir all the ingredients into a smooth batter.

    Add the grated courgettes and fold them in as well.

  • Grease a loaf pan with butter and pour in the cake batter.

  • Bake the zucchini chocolate cake in the hot oven for about 50 minutes.

    After 35 minutes, cover the mold with aluminum foil or baking paper so that it doesn't get too dark.

  • Then take the mold out of the oven, let the chocolate cake cool in it for half an hour, then take it out of the mold.
