This week we have a surefire ♜ cake for you that will make a big impression.
A clear "checkmate" for all the run-of-the-mill lemon cakes out there.
That's how it's done:
You need these ingredients:
Dough:
250 g flour
100 g powdered sugar
0.5 tsp salt
150g butter, melted
4 eggs
100ml milk
3 tbsp matcha powder
3 tbsp cocoa powder
Filling:
apricot jam
lime zest
Glaze:
powdered sugar
lemon juice
Green food coloring
Besides that:
2 pieces of baking molds (23x23cm)
The preparation is easier than you might think:
Preheat the oven to 160°C.
For the dough:
Mix flour, icing sugar, salt, butter, eggs and milk to form a homogeneous dough.
Divide batter evenly into two bowls.
Color one dough green with matcha powder and the other brown with cocoa powder.
Pour the batter into greased and floured baking pans and bake for about 35 minutes (test with a skewer).
Leave to cool completely.
For the filling:
Halve both bases lengthwise down the middle.
Now spread a thin layer of apricot jam on a green base, sprinkle with lime zest and place a dark base on top.
Press carefully.
Then spread the cocoa base thinly with jam and zest and put a light base on top again.
Do the same with the other bases until all the bases are layered alternately.
Carefully cut the cake in half lengthways.
Spread again with jam.
Stack layers on top of each other so that the colors alternate and the typical checkerboard pattern is created.
For the icing:
mix the icing sugar with lemon juice and food coloring to form a thick icing.
Cut the cake into shape and cover with green icing.
Let dry.
Enjoy!
