After teaching us how versatile quinoa can be, whether it's instead of noodles in the Thai Pad Si Yu dish, or as a great addition to fish, Edda Ruiz returns to the classics with a summery and refreshing quinoa salad.
Quinoa is a great base for a salad, it is a real health bomb, also known as a "super grain".
It is rich in protein (20%) and contains a composition of 8 amino acids, which together form a complete and complete protein.
It is rich in vitamins (E and B), minerals (potassium, iron, magnesium, zinc and calcium) and dietary fiber.
It is easy to digest and is considered to help prevent migraines.
Quinoa does not contain gluten (wheat protein), so it is suitable for those who are sensitive to gluten.
Red quinoa is similar in its properties to white quinoa, but also contains lycopene, a particularly successful antioxidant.
So in the mix you enjoy all the worlds.

Ingredients
2 cups quinoa mix "Suget"
3 diced apricots
Bunch of grapes cut into quarters
1 fresh beet, cut into thin sticks
A bunch of chopped cilantro
A handful of roasted walnuts
A handful of match almonds, roasted
For the sauce:
1 lemon (just the juice)
3 tablespoons of olive oil
honey spoon
A spoonful of pomegranates
Crushed garlic clove

Preparation
How do you make a summer quinoa salad?
1 Mix all the sauce ingredients together.
2 Cook the quinoa according to the manufacturer's instructions and refrigerate for at least an hour.
3 Transfer the apricots, grapes, beets, and cilantro to a bowl, mix with the sauce and add nuts and almonds before serving.
