In many Jewish communities who came from Arab countries, the Mediterranean basin and North Africa, there are many versions of sesame cookies: sweet, salty, with additions of honey, tahini, dates, ground almonds, citrus, yogurt, nuts and what not.
Apart from the fact that the sesame is a winning ingredient from a nutritional point of view, it can be kept for a long time in harsh and volatile weather conditions and therefore it is popular almost all year round and in every variation, on holidays and weekdays, and is known as a satisfying, tasty and no less important, nutritious snack.
For an upgrade, you can convert with black sesame.

The recipe in front of you is a little more 'western' and contains brown sugar - which equates to a deeper flavor and an amber color to the cookies.
If you still want to go back to 'originals', you can convert it with silane or honey.
You can also convert half of the amount of regular sesame to black (the one put in the batter or the one that covers the cookie) and get a colorful and beautiful mosaic.

Ingredients
120 grams of butter at room temperature
60 grams brown sugar (1/4 cup)
80 grams of white sugar (6 tablespoons)
Egg L
½ teaspoon vanilla extract
½ tsp baking soda
Hot spoons
230 grams of flour (one and a half cups + 2 tablespoons)
60 grams of sesame (1/2 cup), you should lighten it a little before

Preparation
How do you make sesame seeds?
1 In a medium bowl (a stainless steel bowl with a whisk or a mixer bowl with a guitar hook), cream the butter and both types of sugar for about three minutes until a smooth paste is obtained.
2 Add in the egg and vanilla extract and whip well (move to the whisk).
3 In a small bowl, mix the water and baking soda until dissolved and add to the butter paste.
Whisk until fully incorporated.
4 Add the flour in two batches and mix well until you get a nice homogeneous paste.
5 Add half of the amount of sesame to the cookie mixture and mix well.
6 Make circles the size of a table tennis ball from the dough.
Flatten the circles well on both sides on the remaining sesame seeds and place on the baking sheet.
Keep spaces of 2-3 cm between the cookies.
7Bake in an oven preheated to 170 degrees turbo for 15 minutes until the cookies brown a little and small cracks form in them.
8 Remove from the oven and transfer to a cooling rack.
Allow the cookies to cool completely - this way you can enjoy a particularly crunchy texture.
9Eat together with a cup of tea or strong, sweet coffee and store in a sealed glass jar for up to a month.
More tips
: in case the cookies have lost their crispy texture, you can toast them in the oven for about 2 minutes at 180 degrees, take out and cool for fifteen minutes and eat immediately.
- You can add toasted nuts, bitter chocolate chips, small raisins, roasted sunflower seeds, up to 10% of the total weight of the dough to the cookies.
- You can enrich their taste and aroma by adding 1/2 teaspoon of high-quality almond extract, the zest of one orange or lemon.
- You should lighten the sesame before use (in order to get a stronger flavor and aroma).
