But have you ever tried zucchini bread?

A rather unusual recipe, but zucchini fits perfectly: it is hearty and aromatic, but not too penetrating in taste.

And it gives the bread a lot of juiciness.

In addition to the green vegetables, other ingredients such as flaxseed and ground almonds, which replace part of the flour, make the zucchini bread a healthy recipe.

So you should bake it quickly and try it.

Zucchini Bread Recipe: The Ingredients

Servings:

For 1 bread

Baking time:

45 minutes

  • 200 g flour + 1 tbsp for flouring the mold

  • 1/2 cube of yeast

  • 1 tsp sugar

  • 40 ml lukewarm water

  • 200 grams of zucchini

  • 150 g ground almonds

  • 20 g ground flax seeds

  • 1 tbsp olive oil

  • 2 tsp bread seasoning

  • 1 pinch of salt

Recipe: How to Bake Zucchini Bread

  • Put the flour in a mixing bowl, make a well in it and crumble the yeast into it.

    Add the sugar and water and mix until there are no lumps in the batter.

    Let the dough rise in a warm place for 30 minutes.

  • Wash the zucchini, cut off both ends and grate coarsely with a kitchen grater.

    Gently squeeze the water out of the zucchini shavings and drain the liquid.

  • Mix the almonds, flaxseeds and olive oil into the yeast dough.

    Knead the dough well.

  • Now add the grated zucchini, the bread spices and a pinch of salt to the dough.

    Depending on whether it's too wet or too dry, add a little more flour or water.

    Let the dough rise again for 20 minutes.

  • Flour a loaf tin (26 centimeters long) and pour in the dough.

    Bake the zucchini bread at 180 °C top/bottom heat for about 45 minutes.

    Preheating is not necessary.

  • You can then take the mold out of the oven.

    Allow the bread to cool briefly, then turn it out of the mold and let it cool completely.

    The zucchini bread tastes like normal bread with a topping of your choice, such as butter, spreads, etc. You can also serve it as an accompaniment to soups, for example a cold gazpacho in summer, or salads.
