Rice noodles vs. glass noodles - what's the difference?

If you like to cook Asian dishes, you have probably enjoyed glass or rice noodles before.

At first glance, they differ mainly in shape, but are there more differences?

Oh yes, because, as is so often the case, it's what's on the inside that counts.



Rice noodles are basically made of rice starch and water, while glass noodles are made of mung bean starch and water.

Strictly speaking, the latter are not pasta, as they always have to be made from grain - but we're not that petty.

However, glass and rice noodles have one thing in common: they are extremely quick to prepare because they only have to soak in hot water for a few minutes.

And they taste good too, especially in this delicious rice noodle salad.

That's how it's done:

You need the following ingredients for this:

  • Sauce:

  • 4 tbsp fish sauce

  • 4 tbsp sugar

  • 4 tbsp lime juice

  • 2 garlic cloves, chopped

  • 1 chilli, chopped

  • Meat:

  • 300 g beef, cut into strips

  • 50 g lemongrass, cut

  • 1 garlic clove, chopped

  • 2 tbsp fish sauce

  • Salad:

  • 300 g rice noodles, cooked

  • 50 g romaine lettuce, cut into strips

  • mint

  • Thai basil

  • coriander

  • 1 carrot, cut into strips

  • 0.5 cucumber, in strips

  • toppings:

  • 4 tbsp peanuts

  • 4 tbsp fried onions

How to prepare the Vietnamese rice noodle salad:

  • For the sauce:

    Combine the fish sauce, sugar, lime juice, garlic and chili.

    Set aside and let soak.

  • For the meat:

    Mix the beef with the fish sauce, lemongrass and garlic and leave to marinate in the fridge for at least 30 minutes.

    Cook on a hot griddle.

  • For the salad:

    Arrange the rice noodles, carrots, cucumber and herbs in a bowl with the grilled beef.

    Pour the sauce over and decorate with peanuts and fried onions.

  • Relish!
