This Seafood Fried Rice is the perfect summer meal

Why is seafood called that?
Have you ever thought about this?
It is clear that mussels, squid, crabs, lobsters and co. clearly do not grow on trees, so where does the name come from?
This goes back to the ancient Romans, who had a different understanding of fishing and associated it more with farming (along the lines of “what you sow, you will reap”).
They interpreted the diverse and rich harvest in the form of sea creatures as a blessing from the gods and the “fruits” of their faith.
Back to science, seafood is any non-vertebrate edible marine animal.
A common “Frutti de Mare” mix, which you can buy frozen in any supermarket, mainly contains mussels, squid and shrimp.
Most of the animals come from a breed.
The various seals (e.g. MSC or ASC) provide assistance for conscious and sustainable purchasing.
So nothing stands in the way of a complete enjoyment of our quick fried rice pan.
That's how it's done:
You only need a few ingredients:
Rice:
200 g basmati / wild rice mixture
300ml of water
2 tsp salt
Seafood Pan:
1 tbsp sunflower oil
100 g onion, diced
2 garlic cloves, chopped
15 g lemongrass, chopped
150 g courgettes, diced
200g frozen seafood, thawed
100 g cherry tomatoes, halved
lime juice
Parsely
Salt
The preparation is so easy:
For the rice:
Toast the rice in a pan without oil.
Add the water and salt and simmer until the rice has absorbed the liquid and is cooked.
Put aside.
For the seafood pan:
Heat 1 tablespoon of sunflower oil in a pan.
Add onion, garlic and lemongrass and sauté until translucent.
Add zucchini and fry until zucchini is lightly browned.
Season with 1 tsp salt.
Add the seafood and stir-fry until cooked.
Add the rice and cherry tomatoes to the pan.
Season to taste with lime juice, salt and parsley.
