As in the recipe for the wings in the oven, the chicks, which are actually boneless chicken thighs, do not require much grilling time, so together with vegetables that require a short grilling time, you get a quick meal in one pan.

One of the flavors of the job is the miso, which has a strong umami taste and a unique saltiness.

If you don't have miso, you can replace it with soy or fish sauce, but then you have to find the right taste balance of the sauce.



The vegetables can be replaced with almost any vegetable you like or seasonal vegetables such as pumpkin, fennel, green beans, snow peas, cauliflower or coarsely chopped cabbage.



If you want to add potatoes, it is important to take into account that they need more time in the oven.

Therefore, it is recommended to cut them into relatively small cubes and cover the pan with foil for the first half hour until softened and then roast for another ten minutes uncovered.

Ingredients

  • For chicken and vegetables:

    • 1 kg of potatoes - cut into 3x3 cm cubes

    • 2 carrots - peeled, cut into eighths lengthwise (if the carrots are long, cut in half)

    • 1 zucchini - cut into eighths

    • 1 small sweet potato - cut into half slices

    • 2 purple onions - peeled and cut into eighths

    • 1 basket of mushrooms (champignon or portobello) - halved

  • for the position:

    • 1 squeezed lemon (or 2 limes)

    • ¼ cup maple

    • 1 tablespoon of hokamiso

    • 2 crushed garlic cloves

    • 1 sliced ​​red hot pepper (optional)

    • Ground black pepper to taste

Preparation

How do you make chickpeas in the oven with maple and miso?

  • 1 In a large bowl, mix all the ingredients for the dressing until a uniform mixture is obtained.

    Taste and balance flavors as needed (salty - miso, sour - lemon, sweet - maple, spicy - pepper).

    No need to add salt because the miso is salty.

  • 2 Add the chicken pieces to the bowl and mix so that they are well covered with the sauce.

    If you prepare in advance, at this stage you can put it in the refrigerator to soak and absorb flavors for a few hours or overnight, or continue according to the recipe.

  • 3 Heat the oven to 180 degrees.

  • 4 Add the vegetables to the bowl with the chicks and mix carefully so that they too are coated in the sauce.

  • 5.Arrange the chicks with the vegetables in a medium round pan, relatively deep enough to contain the liquids and place the pan in the center of the hot oven.

    Roast for 35-45 minutes or until the vegetables and chickpeas are browned on the edges.

  • 6 Serve over rice with a little chopped cilantro on top.
