But I admit that reading about pickled onions for the first time can be confusing.
The Germanized word "
gepickelt
" originally comes from the English (pickled), where it means
pickled in vinegar
.
And that's what we're doing with red onions in this recipe.
What's the use of that, you ask?
Well, in the past this was primarily used to preserve seasonal foods throughout the year.
Today, canning and preserving are trendy again.
It's fun, tastes good (the vegetables get a sour aroma) and also makes a great little DIY gift for friends.

That's how it's done:
You only need a few ingredients:
250 grams of red onions
200ml of water
200 ml white wine vinegar
1 tsp salt
1 tablespoon of sugar
1 tbsp peppercorns
1 tbsp mustard seeds
2 bay leaves
The preparation is very easy:
Peel the red onions and cut into thin wedges.
Place in a clean, tightly sealable storage jar.
In a saucepan, add water, apple cider vinegar, salt, sugar, pepper, mustard seeds, and bay leaves.
Boil.
Carefully add the boiling vinegar stock to the onions.
Close the lid tightly.
Leave for at least 6 hours.
Pickled red onions are great as a topping, on a burger, Mexican tacos, or roast beef.
Tip:
The onions can be stored in the refrigerator for up to two weeks.
The pickled red onions taste good as a topping on bread.
