This week I was driving on the coastal road when I suddenly noticed in the distance some marigolds blooming on the side of the road.
Every year towards autumn my heart is pinched and I go back in time to the first days in kindergarten and school.
There are sights and sounds that 'throw' us back to those sweet years and to the stories and songs of the Tishrei holidays accompanied by great excitement and a little fear for the new beginnings.
I remember very well that beginning on the first day of first grade - I sat down in the left column of the classroom, at the second table next to the window.
My mother smiled at me with teary eyes and my grandmother stood at the end of the path and continued to look at me for a long time, waving her long hand at intervals, whispering with wide lips: "Honey! Have a great year honey."
This time I'm sharing with you a great and easy recipe of my grandmother's, with my slight changes, for a gentle, soft, juicy and fragrant honey cake that you can prepare in small jars and sneak on the eve of the holiday or on the first day of school to those you love, and wish them a honey year.
The quantity in the recipe is for 6 small jars with a diameter of 5.5 cm and a height of 9.5 cm.
You can bake in jars of different sizes and provided the volume is similar.

Ingredients
For the wet bowl:
½ cup honey
2 eggs M
⅓ cup oil
½ cup Earl Grey, chilled
2 apple cracker
For the dry bowl:
⅓1 cup self-raising flour
⅓ cup demerara sugar
as baking soda
¼ teaspoon ground cinnamon
⅛ teaspoon spice
Cortegoz Muscat

Preparation
How do you make personal honey cakes?
1 Heat the oven to 170 degrees in turbo mode.
2 In a medium bowl, whisk together the honey and eggs to a slightly foamy mixture.
Pour in the oil and continue to whip.
Add the applesauce and tea and mix well.
3 In a larger bowl, mix together all the dry ingredients: flour, sugar, baking soda, spices and salt.
4 Slowly and gently pour the liquid mixture into the bowl with the dry mixture and mix with a folding motion with a spatula.
Mix until a uniform batter is formed with a smooth and liquid texture.
5 Transfer the mixture to a piping bag, lightly grease the jars with spray and pour the mixture up to 2/3 of the height of each jar.
6 Place the jars on the baking tray of the oven and bake for about 25 minutes in the lower third of the oven.
Perform a 'dry toothpick' test and remove to cool on the work surface.

Before serving
, add fresh apple slices dipped in a little honey.
Notes:
- You can bake in jars of different sizes and provided the volume is similar.
- The cakes will be kept in the jars for up to a week outside the refrigerator in a shaded place and provided that they are closed one by one with a lid.
- It is recommended to warm up a little before serving.
