Why aren't Bavarian white sausages allowed to hear the 12 o'clock bell?

In Bavaria, as so often, it's all about the sausage.

To be more precise: white sausage.

There is no official law about boiled sausage made from veal and pork, but there are some rules that are sacred to Bavarians.

You can read below in the article which ones go with it and how to eat the white sausage correctly.


We don't take the white sausage rules too seriously, and pack the delicious sausages in a pretzel hot dog.

It's worth trying!

That's how it's done:

You only need a handful of ingredients:

  • 4 white sausages

  • 2 tbsp cooking oil 

  • 2 lye sticks

  • 4 tbsp sweet mustard

  • 6 tablespoons coleslaw

  • 4 tbsp radishes, sliced

  • 6 tbsp mountain cheese, grated

  • chives

The preparation is easy:

  • Peel the white sausages and cut into slices.

  • Heat the oil in a pan and brown the sausage slices in it.

    Take out and set aside.

  • Cut the pretzel stick lengthwise, but do not cut through.

  • Spread each pretzel stick with sweet mustard.

    Top with white sausage, coleslaw, radishes, mountain cheese and chives.

  • Zack - done!

  • These white sausage hot dogs are the perfect Oktoberfest snack.

    The white sausage has its origins in Munich and was probably invented out of necessity in the middle of the 19th century.

    When making his sausages, the butcher ran out of sheep intestines that he otherwise used, so he stuffed the sausage meat into pork casings.

    So far so good.

    However, the butcher feared that the pig intestines would not survive the roasting process and cooked the sausages without further ado.

    And the white sausage was born.


    Around the sausage, some commandments wrestled, which should also not know residents of Munich:

    • Always eat the white sausage before 12 noon!

      This is due to the fact that the sausages were sold raw in the early morning and could not be kept for long without a refrigerator.

    • Always in a double pack:

      white sausages are always ordered and eaten in pairs.

    • The accompaniment:

      Bavarians eat a crispy pretzel (

      a resche Brezn

      ), sweet mustard (

      siassn Senf

      ) and (optionally) drink a wheat beer (

      a hoibe Weißbier

      ) with the white sausage.

    • Main thing without skin!

      Otherwise everything is allowed: knife and fork or the typical pinching (from the hand directly into the mouth).
