In honor of the holiday, Liberzon prepares not a stew but a rice pie.

A pastry with a layer of brown and crispy rice, which hides a bunch of legumes with lots of fried onions.

This is a great dish that can be used as a festive addition to one of the meals on the three days of the holiday or be a rich dish on its own, especially if there are vegetarians in the family.

Stuffed rice pastry (vegetarian)

Ingredients

    • ½ cup of white beans soaked in water overnight

    • ½ cup black lentils

    • ½ cup chickpeas soaked in water overnight

    • 4 cups Persian rice

    • Salt

    • black pepper

    • 3-4 tablespoons of olive oil

    • 3 finely chopped onions

    • 2 egg yolks

    • A pinch of turmeric

    • 1 large yogurt cup or 2 small ones (500 grams)

Preparation

How do you make stuffed rice pastry (vegetarian)?

  • 1 Cook the legumes - cook each legume in a separate pot with plenty of water (without salt) until softened.

    Beans and chickpeas for about an hour and a half, black lentils 15-20 minutes.

    Filters.

  • 2 In a large pot with plenty of boiling water and a spoon full of salt, cook the rice for about 7 minutes and drain.

  • 3 In a large pan, fry the onions in olive oil until nicely browned (about 15 minutes, be patient).

    Add the beans and season with salt and pepper.

    Taste and adjust seasoning as needed.

  • 4 Add the egg yolks, yogurt and turmeric to the filtered rice.

  • 5 Heat an oven to 200 degrees and generously grease a 20x30 cm Pyrex pan.

  • 6 Place half of the rice and yogurt mixture tightly on the bottom of the pan, place the legume and onion mixture on top and the other half of the rice on top again.

  • 7 Put in the hot oven and bake for two hours.

    Turn into a serving dish and serve immediately.
