Because Marcella Hazan missed her home and traditional Italian cuisine in her new home in New York in the mid-1950s, she had to help herself: she gave cooking classes and successfully wrote several cookbooks.
Why her recipes were so well received becomes understandable after preparing the best tomato sauce in the world, which you spend most of the time mumbling alone.

All you need is three very simple ingredients:
900 grams ripe, blanched and skinned tomatoes or 500 grams canned San Marzano tomatoes, each cut into chunks
75 grams of butter
One medium onion, peeled and halved
To prepare, put the fresh or canned tomatoes with their juice in a saucepan.
Add the butter, onion, and salt and simmer, uncovered, very gently, until the butter separates from the tomatoes, about 45 minutes.
Stir occasionally and mash oversized chunks of tomato with a spoon.
Season the sauce with salt and remove the onion halves.
Serve the sauce with pasta or potato gnocchi and parmesan.
Even if the secret of this sauce is a good portion of butter in addition to the long stewing time, there are still a lot of healthy ingredients in the tomatoes that are multiplied by cooking.
Tip: Try the tomato sauce with fermented cherry tomatoes, which you can also easily make yourself.
