This has a very thin shell that you can safely leave on and cook with.
It gives the dish extra color and flavor.
How to prepare the quick pumpkin risotto in 35 minutes
Cut the Hokkaido pumpkin into thin wedges and chop them as finely as possible.
You can also use a blender to help.
Then chop only briefly, so that no porridge is formed.
The smaller the pieces, the faster the risotto will be ready.
Peel and finely chop the onion as well.
Heat olive oil in a saucepan and briefly sweat the risotto rice in it.
Then add the pumpkin and onion and sauté as well.
Dissolve the bouillon cube in the hot water.
Deglaze the rice with white wine, then pour in the vegetable stock and season with cumin.
Give it a good stir and then simmer for about 20 minutes on a medium to low heat and in an uncovered pan, until the consistency is nice and creamy and the rice is soft.
Then just stir in 25 g of butter in pieces and 50 g of Parmesan.
