In preparation for the Yom Kippur fast that will begin this Tuesday, we returned to one of our most favorite recipe productions.
8 years ago, Chef Guy Gamzo of Aria restaurant recruited his mother Rachel for a traditional cooking session in preparation for the fast, which is completely relevant even today.
Gemzo the son and the mother, built a wonderful meal for us with three festive dishes from Persian cuisine for a break-up meal and 4 recipes of Egyptian sweets to break the fast.
Intermittent meal in Persian Sangun
It is desirable that the food in the intervening meal should not be too salty or spicy, so we chose dishes from Persian cuisine.
This food sits well in the stomach and will help keep the hunger at bay until the end of the fast.

Ingredients
2 cups of Persian rice (tip: you can soak the rice in hot water for maximum extraction of the starch)
1 sliced potato
Salt
Prosalimon

¼ cup canola oil

Preparation
How to prepare traditional Persian rice?
1 Soak the rice for fifteen minutes in lukewarm water, drain the water and rinse in cold water.
Cook the rice partially cooked for about 8 minutes.
2 Soak the saffron with a tablespoon of water, add a quarter cup of oil, a pinch of cinnamon, a pinch of turmeric and mix.
3Fry the sliced potato in a pot on one side, turn the potatoes after golden and add the spice mixture with the water and oil on top.
4 Add the half-cooked rice and the lemon slice, cover with a towel and a lid and cook for about half an hour.
5 Before serving, turn over on a plate so that the brown potatoes are on top.

for meatballs
KG of ground chicken
½ kg ground beef
8 tablespoons of hummus flour
A large onion

300 grams hummus (soaked at least overnight in water)
4 large zucchini

How do you make Gondi soup?
1
Prepare meatballs:
in a large bowl mix the meats, hummus flour, oil and water.
2 Grate the onion and add to the mixture.
Add all the spices and mix well.
3 Make patties the size of a tennis ball from the mixture.

Prepare the soup:
transfer the soaked chickpeas (filtered from the soaking water) to a large pot.
Add the spices, zucchini and meatballs.
Pour water into the pot until all the ingredients are covered and cook for about half an hour.
Serve hot.

How do you make Chalo Abgosht?
1 Put a little oil in a pot, add all the chopped vegetables and brown them.
2 Add the meat, bone and spices, pour water and bring to a boil.
3 After boiling, lower the heat, cook on a low heat until the meat softens (about an hour).

Ingredients
Ingredients for about 80 medium units:
Kg white flour
A bag of baking powder
500 grams of melted butter
10 grams of vanilla sugar
¼ 1 lukewarm cup
A package of pitted dates in a vacuum

Preparation
How do you make date maamoul?
1 Mix all the dry ingredients in a bowl: flour, sugar, vanilla and baking powder.
Add the melted butter and mix together until you get a smooth and soft dough.

Filling:
long and thick snakes are made from the dates and cut into cubes of about 2 cm, which are rolled into small balls.
3 Spread dough on the palm of your hand and insert a ball of dates, roll into a complete ball, you can pinch with pliers to create a flower pattern.
4 Arrange on a baking sheet and put in an oven preheated to 180 degrees, bake for 25-30, cool.
5 Sprinkle powdered sugar before serving.

אופן ההכנה
איך מכינים בסבוסה?
1מערבבים בקערה את כוס הקמח, אבקת האפייה והסולת.
2בסיר קטן על הגז ממיסים 300 גרם חמאה יחד עם כוס סוכר וכוס וחצי מים. לאחר שהסוכר נמס מורידים מהאש ומערבבים פנימה את תערובת היבשים.
3מעבירים את התערובת לתבנית בקוטר 26/28 ואופים עד להזהבה. לפני האפייה אפשר לעטר את העוגה עם מזלג.
4מכניסים לתנור שחומם מראש ל-190 מעלות ואופים את הבסבוסה במשך 20-25 דקות או עד הזהבה יפה.
5בזמן שהעוגה בתנור - מכינים את סירופ הסוכר.
6כשהבסבוסה מוכנה ועדיין חמה שופכים את הסירופ הקר ומגישים.
