A quick vegetable soup in under 30 minutes?
No problem, try this one.

That's how it's done:
These ingredients are needed for the soup:
cooking oil
100 g red onions, diced
1 garlic clove, chopped
10 g ginger, chopped
400 g red cabbage, diced
100 g potatoes, peeled and diced
150 g apple, diced
1 tsp salt
1 tsp pepper
1 pinch nutmeg
600 ml vegetable broth
200 ml coconut milk
Some lemon juice
Topping:
crème fraîche
pumpkin seeds
Herbs
The preparation is uncomplicated:
Heat cooking oil in a saucepan.
Sauté the onion, garlic and ginger cubes in it until translucent.
Add the red cabbage, potato and apple and fry as well.
Season with salt, pepper and nutmeg.
Deglaze with vegetable broth and coconut milk.
Bring to the boil and simmer for about 15 minutes until the potatoes are tender.
Puree with a blender to a creamy soup.
Flavor with lemon juice.
Place in bowls and decorate with crème fraîche, pumpkin seeds and herbs as desired.
