With a soft texture that melts in your mouth and a nutty taste, our favorite tahini cookies, in an even healthier version, with whole spelled flour.
Whole wheat flour is our preferred flour for use in pastries and cookies to which we want to add nutritional values without compromising the texture and taste, but its combination with raw tahini, as in the recipe here by Rotem Liberzon, is simply genius.
The whole sesame flour and the raw tahini complement each other, both in taste and texture and together create particularly indulgent cookies with a delicate sesame aroma of halva.
Please note
- because of the use of raw flour, there is no need for eggs in the cookies.
If you want to drown it completely, you can replace the butter with a similar vegetable product.

Ingredients
2 cups whole wheat flour
1 teaspoon baking powder
½ cup almond flour
1 raw custard apple
150 grams of butter
½ cup sugar
1 capsilan
1 teaspoon vanilla extract
1 cup sesame seeds for coating

Preparation
How do you make tahini cookies from whole spelled flour?
1 Heat an oven to 170 degrees and line two pans with baking paper.
2 Mix well in a mixer with a kneading hook all the ingredients (except the sesame) until a uniform mixture is obtained.
3 Make small balls, coat them with sesame seeds and place them on the baking trays at intervals of 3 cm from each other.
4 Bake for about 12 minutes or until they are golden on the sides but still a little soft in the center.
Cool completely.
