Plum cake - or the Bavarian version Zwetschgendatschi - is a must in autumn.
Whether with damsons or plums (there is indeed a difference!), served with cream or without, baked with yeast or batter: plum cakes are in high season in autumn and are always a hit on the coffee table.

For the plum cake:
125 g low-fat quark
5 tbsp milk
2 tbsp canola or sunflower oil
30 grams of sugar
1 teaspoon organic lemon zest
200 g wheat flour + more for rolling out
3 tsp baking powder
750 g plums or damsons - That's the difference

For the sprinkles:
80 grams of wheat flour
1 tsp cinnamon powder
25 grams of sugar
35 grams of butter
1-2 tbsp milk

Bake plum crumble cake with quark oil dough: Here's how
For the dough, mix the quark, milk and oil with the sugar and lemon zest in a bowl.
Mix the flour with the baking powder and sift them over.
Process everything with the dough hook of the hand mixer to a smooth dough.
Grease the baking pan.
Preheat the oven to 200°C top/bottom heat or 180°C fan.
On a floured work surface, roll out the dough slightly larger than the tin and line it, leaving a 2-centimetre border all the way around.
Wash, halve and stone the plums and cover the pastry base tightly with them.
For the crumbles, knead the flour, cinnamon, sugar, butter and milk in a bowl with your fingers to form crumbs.
Distribute the sprinkles evenly over the plums.
Bake the plum crumble cake in the hot oven on the middle shelf for 35-40 minutes.
Then leave to cool briefly in the mold.
Then carefully lift the cake onto a wire rack and let cool completely.
