We are devoting an entire theme week to our fall favorite

Autumn is finally here and with it our seasonal highlight: Pumpkin 🎃.

You can now find it at weekly markets or in the supermarket, where it shines brightly at you from afar.

There are many pumpkins and now is the time to buy them!

But not only because they look beautiful, but also taste really delicious.

And they are versatile!

That's why we dedicate a whole week to the pumpkin and provide you with new recipe ideas every day.

Let's start with a classic - a pumpkin soup with an Asian touch.

That's how it's done:

You need these ingredients:

  • 2 tbsp cooking oil

  • 80 g onions, diced

  • 1 garlic clove, chopped

  • 10 g ginger, chopped

  • 5 g chili pepper, diced

  • 2 tsp curry powder

  • 1 tsp pepper

  • 1 tsp salt

  • 800 g pumpkin (e.g. Hokkaido)

  • 80 g potatoes, peeled and diced

  • 500 ml vegetable broth

  • 100 ml orange juice

  • 250 ml coconut milk

  • 1 tsp lime juice

  • Topping:

  • Chili flakes, to taste

  • coconut milk, to taste

  • Sesame, toasted, to taste

  • cilantro, to taste

The preparation is very easy:

  • Heat cooking oil in a saucepan.

    Sauté onions and garlic in it until translucent.

    Add the chili, ginger and spices and sauté briefly.

  • Add pumpkin and potato.

  • Deglaze with vegetable broth, orange juice, coconut milk and lime juice.

  • Simmer uncovered for 20 minutes until vegetables are tender.

    Then puree.

  • Divide the soup between plates and serve garnished with chilli flakes, coconut milk, sesame and coriander.

  • Relish!
